Mexican Tortilla Pie

You can assemble this dish ahead of time. Simply cover, chill & increase bake time by 10-15 minutes.


1 pkg (365 g) Old El Paso* Soft Taco Kit
1 lb (500 g) ground beef, chicken or turkey
1 medium onion, chopped
1 green pepper, chopped
1 1/2 cups (375 mL) Green Giant* Frozen NIBLETS* WHOLE KERNEL CORN
1 cup (250 mL) water
2 cups (500 mL) shredded Cheddar or Monterey Jack cheese
toppings as desired: shredded lettuce, sliced olives, sour cream


  • Heat oven to 425°F (220°C). Spray a 13x9 inch (33x23cm) rectangular baking dish with non-stick cooking spray. Line the pan with tortillas, overlapping slightly, so the tortilla edges come just to the top of the pan.
  • Brown meat, onion and green pepper in a large, deep skillet over medium-high heat, stirring occasionally; drain.
  • Stir in taco seasoning mix, salsa, corn and water. Bring to boil, reduce heat to medium, and cook 10 minutes. Stir occasionally.
  • Remove from heat; stir in 1 cup (250 mL) cheese. Spoon mixture into pan, sprinkle with remaining cheese.
  • Bake 10 to 15 minutes until cheese is melted. Sprinkle with toppings.

Tip: For a crunchy presentation, crumble your favourite tortilla chips over top of pie before serving.
