Ingredients:
1 tbsp (15 mL) vegetable oil
4 - 6 chicken pieces (legs, breasts, thighs)
1 can (19 oz/540 mL) stewed tomatoes
2 tbsp (25 mL) cider vinegar
2 tsp (10 mL) chili powder
1/2 tsp (2 mL) cumin
1/4 tsp (1 mL) pepper
1 can (12 oz/341 mL) or 13/4 cups (425 mL) frozen Green Giant* Niblets OR Peaches & Cream Whole Kernel Corn
1/2 cup (125 mL) green pepper
1 tbsp (15 mL) flour
Tip: Always be sure to cut your chicken into the same size pieces as breast meat tends to cook faster than dark, often resulting in dry, overcooked meat.
