Ingredients:
Cheesecake
1 1/2 cups (375 mL) crushed vanilla wafer cookies (about 50 cookies)
1/4 cup (50 mL) butter or margarine, melted
3 packages (250 g each) cream cheese, softened
1 can (300 mL) sweetened condensed milk (not evaporated)
3 eggs
1 tsp (5 mL) vanilla
1 tsp (5 mL) grated orange peel
Sauce and Garnish
2 cups (500 mL) whipping (heavy) cream
3 egg yolks
2/3 cup (150 mL) sugar
1 tsp (5 mL) grated orange peel
2 tbsp (25 mL) orange-flavoured liqueur or orange juice
2 cups (500 mL) fresh raspberries
Kitchen Tip: If you're bringing the cheesecake to a gathering, replace the side of the pan around the cake to keep the edge from being crushed during the trip.
Tip : Drape a few curls of orange peel over the raspberries to highlight the orange flavour.
