Ingredients:
8 eggs ½ cup (125 mL) diced provolone or mozzarella cheese ½ cup (125 mL) Green Giant* Frozen Niblets* Whole Kernel Corn 2 tbsp (25 mL) chopped fresh chives 2 tbsp (25 mL) chopped fresh parsley ¼ tsp (1 mL) salt ¼ tsp (1 mL) pepper ½ cup (125 mL) diced cooked ham 1 tbsp (15 mL) butter or margarine
8 eggs

½ cup (125 mL) Green Giant* Frozen Niblets* Whole Kernel Corn
2 tbsp (25 mL) chopped fresh chives
2 tbsp (25 mL) chopped fresh parsley
¼ tsp (1 mL) salt
¼ tsp (1 mL) pepper
½ cup (125 mL) diced cooked ham
1 tbsp (15 mL) butter or margarine
Method:
In medium bowl, beat all ingredients except ham and butter with fork or wire whisk until well mixed. Stir in ham.
In 10-inch (25 cm) non-stick skillet, melt butter over medium-low heat. Pour egg mixture into skillet. Cover; cook 14 to 17 minutes or until eggs are set in centre and light brown on bottom. Turn upside down onto serving plate.
