Halibut with Potato Succotash Recipe

Halibut with Potato Succotash
 
 
 
 

Ingredients:

1-1 1/2 lb (500-750 g) halibut, salmon, sole or other fish fillets (about 4)
2 tbsp (25 mL) olive oil
2 cups (500 mL) peeled, diced Yukon Gold potato (about 2 medium)
2 cups (500 mL) Green Giant* VALLEY SELECTIONS* Frozen Lima Beans
1 cup (250 mL) Green Giant* Frozen NIBLETS* WHOLE KERNEL CORN
1/2 cup (125 mL) diced red pepper
1/4 cup (50 mL) diced onion
1 tsp (5 mL) fresh chopped thyme (or 1/2 tsp/2 mL dried)
1/2 tsp (2 mL) seasoned salt
1/4 tsp (1 mL) each, garlic powder and pepper
1/8 tsp (0.5 mL) cayenne pepper

Method:

  • Heat oven to 425°F (220°C). Spray a 9x13 inch (23x33 cm) baking pan with non-stick cooking spray. Place halibut in baking pan; brush with 1 tbsp (15 mL) olive oil.
  • In a non-stick skillet, heat remaining olive oil over medium-high heat. Add potatoes and cook 10 minutes.
  • Stir in lima beans, corn, red pepper and onion. Cook 3 to 5 minutes until vegetables are fork tender; remove from heat.
  • Spoon mixture around halibut in pan. Combine seasonings.
  • Sprinkle halibut and vegetables with seasoning; stir vegetables slightly.
  • Cover pan with parchment paper (or loosely with foil). Bake 15 to 20 minutes or until halibut flakes easily with fork. Squeeze fresh lemon.

Tip: For an equally delicious summer alternative to this dish, try grilling your fish on the barbecue. Serve it alongside room temperature vegetables.
