Easy Mexican Chicken and Beans
 
 
 
 

Ingredients:

1 pkg Old El Paso* Smart Fiesta* Soft Taco Kit
1 lb (500 g) uncooked chicken breast strips for stir-fry
1 can (19 FL oz/ 540 mL) black beans or pinto beans, rinsed, drained
1 can (12 FL oz/ 341 mL) Green Giant* Niblets* Whole Kernel Corn, undrained
2 tbsp (25 mL) water

Method:

  • Spray large skillet with nonstick cooking spray. Cook chicken in skillet over medium-high heat 8 to 10 minutes, stirring occasionally, until no longer pink in centre.

  • Stir in taco seasoning mix, beans, corn and taco sauce. Cook over medium-high heat 8 to 10 minutes, stirring frequently, until sauce is slightly thickened. Serve with tortillas

Tip: Black beans are loaded with plenty of fibre--the soluble kind. Start slowly so you have time to get used to added fiber in the diet!
