Corn And Black Bean Salad

Flavours of lime, cumin, garlic and cilantro marinate tomatoes, black beans and corn in this festive salad.


1 3/4 cups (425 mL) Green Giant* Frozen Peaches & Cream Corn or NIBLETS* WHOLE KERNEL CORN or 1 can (12 oz/341 mL) Green Giant* NIBLETS* WHOLE KERNEL CORN, drained
1 can (28 oz/796 mL) diced tomatoes, drained
1/2 cup (125 mL) black beans, rinsed, drained
1/4 cup (50 mL) chopped red onion
3 tbsp (45 mL) chopped fresh cilantro
2 tbsp (25 mL) fresh lime juice
1 tbsp (15 mL) vegetable oil
1/2 tsp (2 mL) cumin
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
1 clove garlic, minced
1 avocado, pitted, peeled, chopped


  • Cook frozen corn as directed on package. Rinse with cold water; drain.
  • In large bowl, stir together corn and remaining ingredients except avocado. Refrigerate until ready to serve, at least 1 hour. Stir in avocado just before serving.
