Chicken Fajita Salad Wraps

Try a complete and tasty dinner all bundled up in a wrap. Chipotle chiles and a twist of citrus are the flavour secrets.


Chipotle-Lime Dressing
1 cup (250 mL) ranch dressing
1 cup (250 mL) shredded Monterey Jack cheese
8 Old El Paso* Large Flour Tortillas (1 package)
Old El Paso* Thick N' Chunky Salsa, if desired
Sour cream, if desired
1 tbsp (15 mL) lime juice
1 tbsp (15 mL) finely chopped chiles in adobo sauce (or substitute 1 tbsp (15 mL) canned chopped chipotle chilies with 1 tsp (15 mL) chipotle hot red pepper sauce.
1 tsp (15 mL) grated lime peel
Wraps
3 cups (750 mL) chopped cold deli rotisserie chicken
2 cups (500 mL) thinly sliced iceberg lettuce
1 cup (250 mL) Green Giant Niblets* Whole Kernel Corn or Peaches & Cream Corn, cooked, cooled
1/3 cup (75 mL) chopped tomato


  • In small bowl, mix dressing ingredients; set aside. In large bowl, stir together chicken, lettuce, corn and tomato. Add dressing; toss to coat.
  • To assemble each wrap, spoon 1/8 of chicken mixture down centre of each tortilla; sprinkle with cheese. Roll up. Serve immediately with salsa and sour cream.
