Bean & Corn Tacos

A sneaky and yummy way to get your kids to eat their vegetables!


1/2 lb (250 g) lean ground beef
1 pkg (275 g) Old El Paso* Taco Kit
1 small onion, chopped
1/2 sweet green pepper, chopped
1 can (19 oz/540 mL) black beans, drained & rinsed
12 oz (341 mL) Green Giant* NIBLETS* WHOLE KERNEL CORN
1 1/4 cups (300mL) shredded Cheddar cheese


  • Brown ground beef in skillet over medium-high heat; drain.
  • Stir in taco seasoning mix, onion and green pepper; cook for 5 minutes, stirring often.
  • Add beans, corn and taco sauce to skillet. Reduce heat to medium-low and cook for 8 minutes, stirring often.
  • Heat taco shells according to package directions. Fill heated shells with bean mixture, and top with cheese.

Tip: Feel free to experiment with a variety of beans such as chickpeas, red kidney beans or even lentils.
