Cedar-plank Grilled Brie With Berries
I have a pretty amazing baked Brie recipe (http://dutchblitz.net/recipes/baked-brie-with-chutney/), but a few weeks ago I saw a link sent out by the @LifeMadeDelish(https://twitter.com/lifemadedelish) team and I knew I had to make it. Brie, grilled on a cedar plank on the barbecue, topped with mango and berries (http://lifemadedelicious.ca/en/recipes/c/cedar-planked-brie-and-berries)? YES, PLEASE.
I hosted an extended-family get together and knew it would be the perfect appetizer to serve. I had made fish tacos with mango salsa (http://lifemadedelicious.ca/blogs/QUEEN%20OF%20CUISINE/Fish%20Tacos%20With%20Mango%20Salsa.aspx) the night before, and ended up using all of my mangoes, so I threw some blackberries on top instead.
AMAZING. And so easy. I'll be serving this a lot at barbecues throughout the summer.
1 untreated cedar plank (I bought mine at Home Hardware)
1 small round (125 g) Brie cheese
1/2 cup (125 mL) blackberries
1/2 cup (125 mL) fresh raspberries
1 baguette French bread, sliced into 1/4 inch slices.
Soak cedar plank in water at least 1 hour. Meanwhile, heat gas or charcoal grill.
Remove plank from water. Place cheese (in rind) on plank and spoon berries over cheese.
Place plank with cheese on grill over medium heat. Cover grill; cook 15 to 20 minutes or until cheese is warm.
Remove plank from grill. Transfer cheese and fruits to serving plate and serve with bread slices and crackers.
