Nagging your kids to eat their veggies can get old, but encouraging your kids to
eat a rainbow every day can be lot more fun. By consuming foods with vibrant, bright
colours every day, you unavoidably increase your intake of fruits and vegetables.
Vibrantly coloured fruits and vegetables are bursting with antioxidants, fiber,
vitamins and minerals, thereby making them the foundation of a healthy diet.
Getting a rainbow of fruits and vegetables doesn't have to be difficult or time
consuming. A favourite around our home are these Mexican Rainbow Chicken Wraps.
The chicken filling can be prepared ahead of time and stored in the refrigerator,
and then used either hot or cold.
Chicken Filling:
1 tbsp of EVOO
2 chicken breasts
1 red onion
3 tbsp of chopped cilantro |
1/4 cup lime juice
1/3 package of
Old El Paso Fajita Seasoning
1/2 tsp cayenne pepper (optional)
Tip: I like to cut the chicken and vegetables into long thin strips. They stay
in the wraps better that way.
1/2 red bell pepper
1/2 orange bell pepper
1/2 yellow bell pepper
Saute chicken, red onions in olive oil for about 5 minutes, then add the lime juice,
Old El Paso Fajita Seasoning, cilantro and cayenne pepper. Cook about 5 more minutes.
Once fully cooked add bell peppers and cook about 3-4 minutes. Your filling is now
done. You can refrigerate for later or use it hot.

1 cup cheddar cheese (grated)
1 cup lettuce (finely chopped)
1 tomato (diced)
1 avocado (chopped)
